Chickatouille Tuesday


Being that it is the end of the month, I find myself counting the pennies. So tonight's dinner was everyone's favourite peasant's dish, with a twist. Ratatouille with yummy roasted tomato chicken. This being an awesome new creation of mine, it needed an awesome new name: Chickatouille...


What you need:
  • Ripe tomatoes................................400g
  • Chicken pieces (skin on)..............4
  • Baby marrows................................4
  • Mushrooms....................................125g
  • Chicken stock.................................250ml
  • Tomato jam
  • Garlic.........................................1 or 2 cloves
  • Salt
  • Pepper
  • Red wine (optional)......................100ml

How it's done:
  1. Turn the oven on to 200'C
  2. Chop your tomatoes roughly, place in roasting pan with all the juices. (you can also use tinned tomatoes)
  3. Pour in your stock and wine.
  4. Place chicken pieces on top, and push gently into the liquid, but don't cover the skin.
  5. Spread the tomato jam onto the skin.
  6. Season and place into the oven for 20-30mins.
  7. Slice your baby marrows, mushrooms and garlic, place in roasting tray.
